Recipe of the Month

 

Smoked Salmon & Tomatoes with Citrus Dressing

1            lemon, juice and zest of                  1

1            lime, juice and zest of                     1

1 Tbsp.    orange marmalade                    15 ml

1/4 cup    mayonnaise                            50 ml

1 Tbsp.    water                                    15 ml

taste       salt and black pepper            to taste

1/4 lb.     smoked Salmon thinly sliced       125 g

1 lb.        tomatoes                               500 g

1            green onion, thinly sliced                1

Place the lemon juice and zest, lime juice and zest, orange marmalade, mayonnaise, and water in a mixing bow. Whisk to mix and season with salt and pepper. Arrange the salmon slices around the outside edge of a large platter. Cut the tomatoes into bite-size wedges (leave small tomatoes whole) and mound in the centre of the platter. Season again with salt and pepper. Drizzle the citrus dressing over the tomatoes and garnish with the green onion. Serve immediately.
